The transition from shop to factory occurred in 1911 when Angelo Colussi, son of Giacomo II, inaugurated the first factory in Venice, embarking on a remarkable entrepreneurial journey in biscuit production. His signature creation, Baicoli, traditional Venetian biscuits, became his specialty.

The product range expanded in the 1930s to encompass panettones, wafers, and small pastries. Thanks to the opening of 14 shops, these products reached beyond Veneto. Angelo proudly passed the baton to his son Giacomo, entrusting him with the management of a new factory in Vittorio Veneto.

Despite the industrial challenges during the post-war period, Giacomo's tenacity allowed him to overcome obstacles. He initiated a second business in green Umbria, strategically located in central Italy, marking a new chapter in Colussi's journey.

In the 1980s, the sixth generation, represented by Angelo's son Giacomo, embraced technological innovations to expand production into the realm of crackers and rusks.

As we step into the new millennium, Angelo, continuing the family tradition, aspires to build a robust Group capable of anticipating food trends and making its mark in the international market.
